Triple Berry & Banana Smoothie


1 cup       Frozen Triple Berry Blend (Raspberries, Blueberries & Blackberries)
1               Frozen ripe Banana*
1/2 cup   low-fat vanilla (or plain) yogurt
1/4 cup   orange juice
1 tsp        agave (or honey) optional

Combine all ingredients together in a blender and puree until smooth.  You may need to add more orange juice if it's too thick.  Add 1/4 cup at a time.  VIOLA!!!
Pour your delicious TB&B Smoothie into a beautiful wine glass or water goblet, sit back and enjoy!! 


Leek (Vegetable) Soup
2 tsp.           Olive Oil
1                   leek, thinly sliced
1/2               onion, finely chopped
1 cups          reduced-salt vegetable stock
1-1/2 cups   water
1-3/4 cups  chopped tomatoes
1                    carrot, peeled and chooped
2 cups          pumpkin or squash cut into cubes or 
                     Libby's canned pumpkin (NOT pie mix)
1/2               stalk of celery, chopped
1/2               broccoli head steamed (half the time I leave this out)
1/2               package of firm tofu, cut into cubes

  • Pour 2 tsps. of olive oil into a four quart pot and heat it up.
  • Add one finely chopped onion to the pot and turn the stove on low heat.
  • Add the leek and continue to cook until the leek becomes soft.
  • Add the vegetable stock, chopped tomatoes, carrot, celery, pumpkin/squash, and water
  • Bring everything in the pot to a boil, then reduce the heat.
  • Let everything simmer for ten minutes.
  • This is where you mix in the steamed broccoli if desired, and the soup is finished.

Double the recipe and this soup is used as a detox.  In that respect save the leftovers and they can replace lunch and dinner for 3 to 5 days.
